Wisconsin Cheese is a nonprofit organization that is funded by Wisconsin’s dairy farmers to help promote over 600 varieties, types and styles of Wisconsin cheese and the other dairy products. For every 100 pounds of milk produced, 10 cents goes into the dairy board to promote cheese.

I’m really a sucker for cheese – especially Wisconsin cheese. I have family in Wisconsin, plus I sometimes drive rescue transports going up into the state. We’re only about 95 from the southern WI border, so we find outselves up that way pretty often. One of my favorite cheese to buy when I’m there is chocolate cheese (not listed on the site you link to, unfortunately). As far as my favorite cheese on the website, it’s Baby Swiss.

I would love to try the Wisconsin Brie. As brie ages, the flavor intensifies & is reminiscent of mushroom flavor. I’d love to prepare it with bread crumbs or panko deep fried with artichoke hearts. Yummy.
