Fried Apple Pies
I found this recipe over at The Binder Ladies. She is a great friend of mine that has some awesome recipes on her site. You will find this one and many more over there.
This recipe will depend on how many you decide to make. The following recipe will make 5 Fried Apple Pies. For my family we tripled the recipe so that each of us could have two. One for now and one for later. 😉
2 small-medium green apples
1 – 1 1/2 tablespoons brown sugar
1 teaspoon cinnamon
white chocolate chips
5 egg roll wrappers
oil for frying
powdered sugar for dusting
Place oil in skillet (enough to cover the pies), and turn on medium-high. Once water sizzles when dripped into oil, turn down to medium. Skin and dice up apples. Place in bowl with brown sugar and cinnamon. Mix up until apples are coated. Don’t worry – you won’t need any liquid, and it may appear dry at first. Lay out egg roll wrappers and place about a tablespoon of apple mixture in the middle. Place a few white chocolate chips on top of apples. Fold wrapper over, corner to corner to create a triangle. Use a fork to press down edges. Fry in oil, turning frequently, until pies are a golden brown. Remove from oil, drain and pat on paper towel, then dust with powdered sugar.
